- 8 oz short pasta (penne, fusilli, or similar)
- 1 pint cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives, halved
- 3 cloves garlic, minced
- 1 cup feta cheese, crumbled
- 2 cups vegetable broth
- 1 tsp dried oregano
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the minced garlic and sauté until fragrant.
- Add the cherry tomatoes, olives, and dried oregano, cooking for a few minutes until the tomatoes start to soften.
- Stir in the pasta and vegetable broth, ensuring the pasta is submerged.
- Bring to a boil, then reduce heat to simmer and cover for about 10-12 minutes, or until pasta is cooked al dente.
- Remove from heat, stir in the crumbled feta cheese, and season with salt and pepper to taste.
- Serve hot, garnished with additional feta and fresh herbs if desired.
Notes
For extra flavor, add fresh herbs like parsley or basil. Can be customized with spinach or grilled chicken.
