Description

A delicious and satisfying one-pot meal featuring vibrant Mediterranean flavors with pasta, feta, cherry tomatoes, and olives.


Ingredients

  • 8 oz short pasta (penne, fusilli, or similar)
  • 1 pint cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives, halved
  • 3 cloves garlic, minced
  • 1 cup feta cheese, crumbled
  • 2 cups vegetable broth
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the cherry tomatoes, olives, and dried oregano, cooking for a few minutes until the tomatoes start to soften.
  4. Stir in the pasta and vegetable broth, ensuring the pasta is submerged.
  5. Bring to a boil, then reduce heat to simmer and cover for about 10-12 minutes, or until pasta is cooked al dente.
  6. Remove from heat, stir in the crumbled feta cheese, and season with salt and pepper to taste.
  7. Serve hot, garnished with additional feta and fresh herbs if desired.

Notes

For extra flavor, add fresh herbs like parsley or basil. Can be customized with spinach or grilled chicken.
