Description

A hearty Mediterranean twist on the classic stroganoff, featuring rich mushrooms in a creamy sauce.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 16 oz (450g) mushrooms (cremini or button), sliced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1 cup vegetable broth
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the sliced mushrooms and thyme, cooking until the mushrooms are browned and tender, about 8-10 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Stir in the sour cream (or Greek yogurt) and soy sauce. Mix well and let it cook for another 2-3 minutes to thicken.
  6. Season with salt and pepper to taste.
  7. Serve over pasta or rice and garnish with fresh parsley.

Notes

For added depth of flavor, consider adding a splash of white wine after cooking the mushrooms. Use any type of mushroom for unique flavors.
