A hearty Mediterranean twist on the classic stroganoff, featuring rich mushrooms in a creamy sauce.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 16 oz (450g) mushrooms (cremini or button), sliced
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- 1 cup vegetable broth
- 1 cup sour cream or Greek yogurt
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced mushrooms and thyme, cooking until the mushrooms are browned and tender, about 8-10 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the sour cream (or Greek yogurt) and soy sauce. Mix well and let it cook for another 2-3 minutes to thicken.
- Season with salt and pepper to taste.
- Serve over pasta or rice and garnish with fresh parsley.
Notes
For added depth of flavor, consider adding a splash of white wine after cooking the mushrooms. Use any type of mushroom for unique flavors.
