Delightful tarts filled with earthy mushrooms, shallots, and creamy goat cheese, perfect for appetizers or snacks.
Ingredients

- 1 sheet puff pastry (thawed)
- 1 egg, beaten (for brushing)
- 2 tablespoons olive oil
- 3 shallots, thinly sliced
- 10 oz (280 g) cremini or mixed mushrooms
- 4 oz goat cheese, crumbled
- 2 tablespoons fresh herbs (such as thyme or rosemary)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and cut into squares. Place them on a baking sheet lined with parchment paper.
- Heat olive oil in a skillet over medium heat. Add shallots and cook until softened.
- Add sliced mushrooms, salt, and pepper, and cook until the mushrooms are browned and no moisture is left.
- Stir in fresh herbs and remove from heat.
- Spoon the mushroom mixture onto the center of each puff pastry square and top with crumbled goat cheese.
- Brush the edges of the pastry with the beaten egg.
- Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown.
- Let cool slightly before serving.
Notes
Serve warm or at room temperature. Store leftovers in an airtight container in the fridge and reheat in the oven.
