Ingredients

- 2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup warm water
- 1 tbsp olive oil
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh mint
- 1/2 cup chopped spinach
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the flour and salt.
- Let the dough rest for 30 minutes.
- In another bowl, combine the feta cheese, mint, spinach, salt, and pepper.
- Divide the dough into equal portions and roll out each piece into a flat round.
- Place a spoonful of the feta mixture in the center of each round, fold over, and seal the edges.
- Heat a skillet over medium heat and cook the stuffed flatbreads for 3-4 minutes on each side until golden brown.
- Serve warm.
<liGradually add the warm water and olive oil, mixing until a dough forms. Knead the dough for 5-7 minutes until smooth.
Notes
These flatbreads are best served warm, with yogurt or tzatziki for dipping. They can be made ahead of time and stored in the fridge.
