Description

A delightful twist on classic macaroni and cheese with creamy cheese, pasta, and fresh Mediterranean flavors, featuring sun-dried tomatoes and feta.


Ingredients

  • 12 oz elbow macaroni (or penne)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small red onion, finely diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced red onion; sauté until translucent.
  3. Stir in chopped sun-dried tomatoes and cook for another 2 minutes.
  4. In a large pot, combine the cooked macaroni, garlic-onion mixture, mozzarella cheese, feta cheese, heavy cream, dried oregano, salt, and pepper.
  5. Mix everything well and cook over low heat until the cheese is melted and the mixture is creamy.
