- 12 oz elbow macaroni (or penne)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small red onion, finely diced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup feta cheese, crumbled
- 1/2 cup heavy cream
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and diced red onion; sauté until translucent.
- Stir in chopped sun-dried tomatoes and cook for another 2 minutes.
- In a large pot, combine the cooked macaroni, garlic-onion mixture, mozzarella cheese, feta cheese, heavy cream, dried oregano, salt, and pepper.
- Mix everything well and cook over low heat until the cheese is melted and the mixture is creamy.
- Serve hot and enjoy your Mediterranean Macaroni and Cheese.
Notes
Consider adding spinach or bell peppers for more veggies. Use whole wheat pasta for a healthier option. Adjust cheese to your liking.
