Crispy on the outside and creamy on the inside, these loaded mashed potato cakes are flavored with feta and fresh herbs for a delightful appetizer or side dish.
Ingredients

- 2 cups cooked mashed potatoes (about 4 medium potatoes)
- 1/4 cup feta cheese, crumbled
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup chopped fresh herbs (parsley, dill, or basil)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the cooked mashed potatoes, feta cheese, Greek yogurt, fresh herbs, minced garlic, salt, and pepper until well combined.
- Form the mixture into patties.
- Heat a skillet over medium heat and add a little oil.
- Cook the patties for about 3-4 minutes on each side or until golden brown.
- Serve warm, optionally with additional Greek yogurt or a dipping sauce.
Notes
For easier handling, make sure your mashed potatoes are cold. You can customize with olives or sun-dried tomatoes for extra flavor.
