- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 medium zucchini, halved and sliced
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for 30 seconds.
- Add the ground turkey, breaking it apart, and cook until browned, about 5-7 minutes.
- Add the sliced zucchini, season with salt and pepper, and cook for another 5-6 minutes until tender.
- Serve warm.
Notes
Feel free to add other vegetables like bell peppers or spinach for added nutrition. Adjust seasonings to taste, and for heat, add crushed red pepper flakes.
