Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and carrots, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and sauté for another minute.
  3. Stir in the chickpeas, vegetable broth, diced tomatoes, oregano, and basil.
  4. Bring to a boil, then reduce the heat and let simmer for about 20-25 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley or basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4-5 days, or freeze for up to 3 months. This soup tastes even better the next day.
