A delightful one-pan bake combining halloumi cheese with fresh vegetables, perfect for family dinners or gatherings.
Ingredients

- 1 block halloumi cheese (~225g)
- 2 medium zucchinis, sliced into rounds
- 1 medium red onion, sliced into thick wedges
- 1 cup cherry tomatoes
- 1 medium red bell pepper, chopped
- Olive oil, for drizzling
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Slice the halloumi block vertically several times without cutting all the way through, then place it in the center of a baking tray.
- Arrange the zucchini, red onion, cherry tomatoes, and red bell pepper around the halloumi in the tray.
- Drizzle olive oil over the vegetables and halloumi, and season with salt and pepper.
- Bake in the preheated oven for about 25-30 minutes, or until the vegetables are tender and the halloumi is golden brown.
- Serve warm and enjoy!
Notes
Make sure not to cut the halloumi all the way through so it holds its shape while baking. This dish is great for meal prep and can be enjoyed cold as well.
