Ingredients

- 1 lb ground beef
- 1 small red onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt & pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté red onion and garlic until softened.
- Add ground beef and cook until browned and fully cooked, breaking it into crumbles.
- Stir in zucchini and bell peppers. Cook for 5-7 minutes until just tender.
- Mix in tomato paste, smoked paprika, cumin, salt, and pepper. Stir until well coated.
- Remove from heat, sprinkle with fresh parsley, and serve hot!
Notes
Feel free to add other vegetables or spices to customize the dish. Great served with rice or quinoa.
