Description

A quick and delicious stir fry combining juicy ground beef with fresh vegetables and bold Mediterranean flavors.


Ingredients

  • 1 lb ground beef
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté red onion and garlic until softened.
  2. Add ground beef and cook until browned and fully cooked, breaking it into crumbles.
  3. Stir in zucchini and bell peppers. Cook for 5-7 minutes until just tender.
  4. Mix in tomato paste, smoked paprika, cumin, salt, and pepper. Stir until well coated.
  5. Remove from heat, sprinkle with fresh parsley, and serve hot!

Notes

Feel free to add other vegetables or spices to customize the dish. Great served with rice or quinoa.
