A hearty one-pan meal combining ground beef, sweet potatoes, and zucchini with Mediterranean flavors.

- 1 lb (450g) ground beef (preferably lean)
- 2 medium sweet potatoes, peeled and diced into small cubes
- 2 medium zucchinis, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and garlic. Sauté until tender, about 3-4 minutes.
- Add the ground beef to the skillet, cooking until browned.
- Stir in the diced sweet potatoes. Cook until they begin to soften, about 5 minutes.
- Add the diced zucchini, seasoning with salt and pepper to taste.
- Cook until all vegetables are tender and the beef is cooked through, about another 5-7 minutes.
- Serve hot and enjoy!
Notes
For extra flavor, add herbs like oregano or basil when cooking. You can also replace beef with ground turkey or lentils for a lighter version.
