Ingredients

  • 1 lb (450g) ground beef (preferably lean)
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and garlic. Sauté until tender, about 3-4 minutes.
  3. Add the ground beef to the skillet, cooking until browned.
  4. Stir in the diced sweet potatoes. Cook until they begin to soften, about 5 minutes.
  5. Add the diced zucchini, seasoning with salt and pepper to taste.
  6. Cook until all vegetables are tender and the beef is cooked through, about another 5-7 minutes.
  7. Serve hot and enjoy!

Notes

For extra flavor, add herbs like oregano or basil when cooking. You can also replace beef with ground turkey or lentils for a lighter version.
