Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 ripe mangos, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
  • 1 cup cooked rice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Brush this mixture onto the salmon fillets.
  3. Grill the salmon for 5-6 minutes on each side, or until it is cooked through.
  4. In another bowl, combine diced mangos, red bell pepper, red onion, and lime juice to make the salsa.
  5. Serve the grilled salmon over a bed of rice topped with the mango salsa.
