- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 ripe mangos, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 1 cup cooked rice
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Brush this mixture onto the salmon fillets.
- Grill the salmon for 5-6 minutes on each side, or until it is cooked through.
- In another bowl, combine diced mangos, red bell pepper, red onion, and lime juice to make the salsa.
- Serve the grilled salmon over a bed of rice topped with the mango salsa.
Notes
Garnish with extra lime wedges or fresh herbs for added flavor. Store leftovers in an airtight container for up to 2 days.
