Ingredients

  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • Salt and pepper to taste
  • Fresh lemon juice
  • Fresh herbs (like parsley or mint) for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix chickpeas with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
  3. Grill the chickpeas for about 5-7 minutes until they’re slightly charred.
  4. In a separate bowl, combine cooked quinoa, diced cucumber, and grilled chickpeas.
  5. Drizzle with fresh lemon juice and toss gently.
  6. Garnish with fresh herbs before serving.
