Ingredients

- 1.5 cups cooked or canned chickpeas (rinsed & drained)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1 cup cooked quinoa
- 1 cucumber, diced
- Salt and pepper to taste
- Fresh lemon juice
- Fresh herbs (like parsley or mint) for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix chickpeas with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
- Grill the chickpeas for about 5-7 minutes until they’re slightly charred.
- In a separate bowl, combine cooked quinoa, diced cucumber, and grilled chickpeas.
- Drizzle with fresh lemon juice and toss gently.
- Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Serve warm or cold.
