A healthy and delicious meal featuring grilled chicken and fresh broccoli topped with creamy garlic sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 tbsp olive oil, divided
  • Salt & black pepper, to taste
  • 3 garlic cloves, minced
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tbsp lemon juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, coat chicken breasts with 1 tbsp olive oil, salt, and black pepper.
  3. Grill the chicken for about 6-7 minutes per side or until fully cooked.
  4. In another bowl, toss broccoli florets with remaining olive oil, salt, and pepper. Grill for 4-5 minutes until tender.
  5. Prepare the creamy garlic sauce by mixing garlic, yogurt or mayonnaise, lemon juice, salt, and pepper in a bowl.
  6. Slice the grilled chicken and place it in a bowl with broccoli, drizzling the creamy garlic sauce on top.

Notes

Serve warm; you can add cooked quinoa or brown rice for extra heartiness.
