Ingredients

- 3 medium potatoes, peeled and cubed
- 3 cloves garlic, minced
- 1/3 cup crumbled feta cheese (optional or use dairy-free)
- Salt and pepper to taste
- Olive oil for frying
- Chopped fresh herbs (like parsley or oregano) for garnish
Instructions
- Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- In a mixing bowl, mash the potatoes and mix in minced garlic, feta cheese, salt, and pepper.
- Form the mixture into small balls or patties.
- Heat olive oil in a skillet over medium heat. Fry the potato pops until golden brown and crispy on all sides, about 4-5 minutes per side.
- Remove and drain on paper towels.
- Garnish with chopped fresh herbs before serving.
Notes
Serve warm with dipping sauces such as tzatziki or garlic aioli. Store leftovers in an airtight container for up to three days.
