Ingredients

- 1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 3 tbsp olive oil (divided)
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme or rosemary
- 2 cups broccoli florets
- 2 cups fresh spinach
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a bowl, combine the chicken, 2 tbsp olive oil, garlic, oregano, thyme (or rosemary), salt, and pepper. Marinate for at least 30 minutes.
- In a large skillet, heat the remaining 1 tbsp olive oil over medium heat. Add the marinated chicken and cook until golden brown and cooked through, about 6-8 minutes.
- Add the broccoli to the skillet and sauté until bright green and tender, about 4-5 minutes.
- Stir in the spinach and cook until wilted.
- Serve with lemon wedges.
Notes
For extra flavor, consider marinating the chicken longer than 30 minutes. Make sure to cut the chicken into uniform pieces for even cooking.
