Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 tbsp olive oil (divided)
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme or rosemary
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a bowl, combine the chicken, 2 tbsp olive oil, garlic, oregano, thyme (or rosemary), salt, and pepper. Marinate for at least 30 minutes.
  2. In a large skillet, heat the remaining 1 tbsp olive oil over medium heat. Add the marinated chicken and cook until golden brown and cooked through, about 6-8 minutes.
  3. Add the broccoli to the skillet and sauté until bright green and tender, about 4-5 minutes.
  4. Stir in the spinach and cook until wilted.
  5. Serve with lemon wedges.

Notes

For extra flavor, consider marinating the chicken longer than 30 minutes. Make sure to cut the chicken into uniform pieces for even cooking.
