  • 2 medium zucchini, sliced into thin rounds
  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the zucchini, red bell pepper, cherry tomatoes, and red onion.
  3. Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
  4. Transfer the vegetable mixture to a greased baking dish. Top with crumbled feta cheese and breadcrumbs if using.
  5. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the top is golden and bubbly.
  6. Remove from the oven and let cool slightly before serving.
