Ingredients

- 2 medium zucchini, sliced into thin rounds
- 1 medium red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup breadcrumbs (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the zucchini, red bell pepper, cherry tomatoes, and red onion.
- Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
- Transfer the vegetable mixture to a greased baking dish. Top with crumbled feta cheese and breadcrumbs if using.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the top is golden and bubbly.
- Remove from the oven and let cool slightly before serving.
