Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, cut into wedges
  • Feta cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the zucchini, red bell pepper, yellow bell pepper, and red onion on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Toss the veggies to coat evenly.
  5. Roast in the oven for about 20-25 minutes or until tender and slightly caramelized.
  6. Remove from the oven and let cool slightly.
