- 1 yellow bell pepper, sliced

Instructions
- Preheat the oven to 400°F (200°C).
- Spread the zucchini, red bell pepper, yellow bell pepper, and red onion on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Toss the veggies to coat evenly.
- Roast in the oven for about 20-25 minutes or until tender and slightly caramelized.
