- 3 medium zucchini, grated and squeezed dry
- 1 medium onion, diced or minced
- 1–2 cloves garlic, minced (optional)
- 1 tomato, diced (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the grated zucchini, onion, and garlic (if using).
- Optionally, add the diced tomato.
- Transfer the mixture to a greased casserole dish.
- Bake for 25-30 minutes or until the top is golden and the mixture is set.
- Allow to cool slightly before serving.
Notes
Squeeze the grated zucchini well to remove excess moisture for better texture. Feel free to add other vegetables or sprinkle cheese on top before baking.
