Description

Ingredients

  • 2 tbsp olive oil
  • 2 lbs (900g) beef chuck or stewing beef, cut into -inch cubes
  • Salt and pepper, to taste
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Season the beef with salt and pepper, then add to the pot and brown on all sides.
  3. Remove the beef and set it aside.
  4. In the same pot, add onions and cook until translucent.
  5. Stir in garlic, carrots, and celery; cook for a few more minutes.
  6. Return the beef to the pot and add enough water or broth to cover.
  7. Bring to a simmer, then cover and reduce heat to low.
  8. Cook for 90 to 120 minutes or until the beef is tender.
  9. Serve hot.

Notes

For added flavor, consider using fresh herbs like thyme or bay leaves. This stew can also be adapted with different vegetables.
