Ingredients

- 2 tbsp olive oil
- 2 lbs (900g) beef chuck or stewing beef, cut into 1½-inch cubes
- Salt and pepper, to taste
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Season the beef with salt and pepper, then add to the pot and brown on all sides.
- Remove the beef and set it aside.
- In the same pot, add onions and cook until translucent.
- Stir in garlic, carrots, and celery; cook for a few more minutes.
- Return the beef to the pot and add enough water or broth to cover.
- Bring to a simmer, then cover and reduce heat to low.
- Cook for 90 to 120 minutes or until the beef is tender.
- Serve hot.
Notes
For added flavor, consider using fresh herbs like thyme or bay leaves. This stew can also be adapted with different vegetables.
