Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the shredded zucchini, egg, Parmesan cheese, breadcrumbs, minced garlic, basil, and oregano.
- Mix until well combined.
- Scoop the mixture and form small bite-sized balls or patties.
- Place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Let cool slightly before serving.
Notes
Squeeze out excess moisture from the zucchini for firmer bites. Can add chopped spinach or sun-dried tomatoes for variations.
