Description
Delicious and healthy Mediterranean date balls packed with natural sweetness from dates, healthy fats from walnuts, and a fun texture from coconut.
Ingredients

- 1 1/2 cups Medjool dates (pitted)
- 3/4 cup walnuts
- 1/2 cup unsweetened shredded coconut (plus extra for rolling)
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions
- In a food processor, combine the pitted dates, walnuts, shredded coconut, cinnamon, sea salt, and vanilla extract.
- Process until the mixture is well combined and sticky.
- If the mixture is too dry, add a bit of water or more dates.
- Using your hands, form small balls from the mixture and roll them in the extra shredded coconut.
- Place the date balls on a tray and refrigerate for at least 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to one week. For longer storage, freeze with parchment paper in between to prevent sticking.
