Description

A light and refreshing dish that brings together fluffy rice with fresh cucumber and aromatic herbs, perfect for a healthy meal.


Ingredients

  • 1 cup long-grain rice (basmati or jasmine)
  • 1 3/4 cups water or vegetable broth
  • 1 tbsp olive oil or butter
  • 1 small cucumber, diced
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring water or vegetable broth to a boil. Add the rice, olive oil or butter, and a pinch of salt.
  3. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff the rice with a fork.
  6. Stir in the diced cucumber, fresh mint, and parsley.
  7. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Try adding other fresh herbs or vegetables for variation.
