Description
A light and refreshing dish that brings together fluffy rice with fresh cucumber and aromatic herbs, perfect for a healthy meal.
Ingredients

- 1 cup long-grain rice (basmati or jasmine)
- 1 3/4 cups water or vegetable broth
- 1 tbsp olive oil or butter
- 1 small cucumber, diced
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring water or vegetable broth to a boil. Add the rice, olive oil or butter, and a pinch of salt.
- Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit for 5 minutes.
- Fluff the rice with a fork.
- Stir in the diced cucumber, fresh mint, and parsley.
- Serve warm or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Try adding other fresh herbs or vegetables for variation.
