- 2 medium yellow squash, sliced into 1/4-inch rounds

Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the zucchini, yellow squash, and halved tomatoes.
- Drizzle with olive oil and season with salt and pepper, tossing to coat evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and beginning to brown.
- Remove from the oven and, if desired, sprinkle with fresh herbs before serving.
Notes
Make sure the vegetables are cut evenly and do not overcrowd the baking sheet for best crispiness. This dish is best served warm.
