Ingredients

- 1 cup orzo
- 2 cups baby spinach
- 1/3 cup crumbled feta
- 1/4 cup toasted pine nuts
- 2 tablespoons olive oil
- 1 lemon (zest and juice)
- Salt and pepper to taste
Instructions
- Cook the orzo according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the cooked orzo, spinach, lemon zest, and lemon juice. Stir until the spinach wilts.
- Remove from heat and fold in crumbled feta and toasted pine nuts.
- Season with salt and pepper to taste. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat gently with a splash of water.
