Description

Ingredients

  • 1 cup orzo
  • 2 cups baby spinach
  • 1/3 cup crumbled feta
  • 1/4 cup toasted pine nuts
  • 2 tablespoons olive oil
  • 1 lemon (zest and juice)
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the cooked orzo, spinach, lemon zest, and lemon juice. Stir until the spinach wilts.
  4. Remove from heat and fold in crumbled feta and toasted pine nuts.
  5. Season with salt and pepper to taste. Serve warm.

Notes
