- 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
- 2 cups fresh baby spinach
- 1 cup marinated artichoke hearts, chopped and drained
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 1/2 small red onion, finely chopped (optional)
- 1 tsp dried oregano
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, spinach, artichoke hearts, sun-dried tomatoes, red onion (if using), and oregano.
- Mix until well combined.
- Transfer the mixture to a greased casserole dish.
- Bake for 25-30 minutes or until heated through and the top is slightly golden.
- Remove from the oven and let cool slightly before serving.
Notes
For a creamier version, mix in some cream cheese or sour cream before baking. This casserole can be stored in an airtight container for up to 3 days.
