Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, baby spinach, and red onion.
- In another bowl, combine the cottage cheese, mozzarella cheese, oregano, salt, and pepper.
- Layer the vegetable mixture at the bottom of a baking dish.
- Spread the cheese mixture over the vegetables evenly.
- Drizzle with olive oil.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
