Ingredients

  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach, chopped
  • 1/2 cup red onion, finely chopped
  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, baby spinach, and red onion.
  3. In another bowl, combine the cottage cheese, mozzarella cheese, oregano, salt, and pepper.
  4. Layer the vegetable mixture at the bottom of a baking dish.
  5. Spread the cheese mixture over the vegetables evenly.
  6. Drizzle with olive oil.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
