- 1 medium zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach, chopped
- 1/2 cup red onion, finely chopped
- 2 cups cottage cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh herbs (like basil or parsley) for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the zucchini, bell peppers, cherry tomatoes, spinach, and red onion.
- Add the cottage cheese, garlic powder, salt, and pepper to the vegetable mixture and stir until combined.
- Transfer the mixture to a greased baking dish and spread it out evenly.
- Top with shredded mozzarella cheese and drizzle a little olive oil over the top.
- Bake in the preheated oven for 25-30 minutes or until the cheese is golden and bubbling.
- Remove from the oven and let it cool slightly before serving. Garnish with fresh herbs if desired.
