Ingredients

- 4 salmon fillets
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can coconut milk
- 2 tbsp curry powder
- 1 tsp salt
- 1 tsp pepper
- 2 cups broccoli florets
Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and cook until translucent.
- Add minced garlic and cook for another minute.
- Stir in curry powder, salt, and pepper.
- Pour in coconut milk and bring to a simmer.
- Add salmon fillets, skin-side down, and cover the pan.
- Cook for 5-7 minutes until salmon is cooked through.
- In the last few minutes, add broccoli florets and steam in the coconut curry sauce until tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a vegetarian option, replace the salmon with tofu or chickpeas. Adjust cooking times accordingly.
