Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups broccoli florets

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in curry powder, salt, and pepper.
  5. Pour in coconut milk and bring to a simmer.
  6. Add salmon fillets, skin-side down, and cover the pan.
  7. Cook for 5-7 minutes until salmon is cooked through.
  8. In the last few minutes, add broccoli florets and steam in the coconut curry sauce until tender.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

For a vegetarian option, replace the salmon with tofu or chickpeas. Adjust cooking times accordingly.
