Description
A tasty and satisfying burrito with grilled chicken, chipotle ranch dressing, and fresh veggies wrapped in a warm tortilla.
Ingredients

- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 cup chipotle ranch dressing
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup shredded cheese
- Tortillas
- Lettuce
- Avocado (optional)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, smoked paprika, and dried oregano. Add the chicken and coat well. Let it marinate for 20-30 minutes.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Slice the grilled chicken and set it aside.
- Lay a tortilla flat and layer it with rice, black beans, diced tomatoes, cheese, grilled chicken, and lettuce.
- Drizzle chipotle ranch dressing on top and add avocado if desired.
- Roll up the burrito and serve.
Notes
Use a meat thermometer to check the chicken’s internal temperature; it should reach 165°F (75°C). You can prepare extra chipotle ranch dressing for a dipping sauce!
