Description

A tasty and satisfying burrito with grilled chicken, chipotle ranch dressing, and fresh veggies wrapped in a warm tortilla.


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 cup chipotle ranch dressing
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • Tortillas
  • Lettuce
  • Avocado (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, smoked paprika, and dried oregano. Add the chicken and coat well. Let it marinate for 20-30 minutes.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. Slice the grilled chicken and set it aside.
  5. Lay a tortilla flat and layer it with rice, black beans, diced tomatoes, cheese, grilled chicken, and lettuce.
  6. Drizzle chipotle ranch dressing on top and add avocado if desired.
  7. Roll up the burrito and serve.

Notes

Use a meat thermometer to check the chicken’s internal temperature; it should reach 165°F (75°C). You can prepare extra chipotle ranch dressing for a dipping sauce!
