Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

  • 1/4 cup Kalamata olives, halved
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
