A delightful and nutritious one-pan dish combining juicy chicken, fresh zucchini, and tangy feta cheese.


Ingredients

  • 500g (1 lb) boneless chicken breast or thighs, diced
  • 2 medium zucchinis, sliced into half-moons
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
  3. Add diced chicken and cook until browned.
  4. Stir in sliced zucchini, cherry tomatoes, oregano, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to a greased baking dish.
  6. Sprinkle feta cheese on top.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the zucchini is tender.
  8. Let cool for a few minutes before serving.

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
