Ingredients

- 500g (1 lb) boneless chicken breast or thighs, diced
- 2 medium zucchinis, sliced into half-moons
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried oregano
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- Add diced chicken and cook until browned.
- Stir in sliced zucchini, cherry tomatoes, oregano, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to a greased baking dish.
- Sprinkle feta cheese on top.
- Bake for 25-30 minutes or until the chicken is cooked through and the zucchini is tender.
- Let cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
