- 1 cup yellow rice (saffron or turmeric seasoned)
- 1 chicken thigh or breast, cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- Salt & pepper to taste
- 1/4 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- 1/2 cup chopped cucumber
- 1/2 cup cherry tomatoes, halved
- 1 tbsp red onion, finely diced
- 1 tbsp chopped parsley
- 1 tbsp lemon juice
Instructions
- Season the cubed chicken with smoked paprika, garlic powder, oregano, salt, and pepper. Heat olive oil in a skillet and sauté the chicken until golden and fully cooked.
- Cook the yellow rice according to the package directions and keep it warm.
- In a bowl, mix chopped cucumber, halved cherry tomatoes, diced onion, parsley, lemon juice, and a pinch of salt and pepper to create a fresh salad.
- To assemble, fill a bowl with yellow rice, top it with the sautéed chicken, cucumber-tomato salad, a dollop of tzatziki sauce, and sprinkle crumbled feta cheese on top.

Notes
