Ingredients

  • 1 cup yellow rice (saffron or turmeric seasoned)
  • 1 chicken thigh or breast, cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • Salt & pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp red onion, finely diced
  • 1 tbsp chopped parsley
  • 1 tbsp lemon juice

Instructions

  1. Season the cubed chicken with smoked paprika, garlic powder, oregano, salt, and pepper. Heat olive oil in a skillet and sauté the chicken until golden and fully cooked.
  2. Cook the yellow rice according to the package directions and keep it warm.
  3. In a bowl, mix chopped cucumber, halved cherry tomatoes, diced onion, parsley, lemon juice, and a pinch of salt and pepper to create a fresh salad.
  4. To assemble, fill a bowl with yellow rice, top it with the sautéed chicken, cucumber-tomato salad, a dollop of tzatziki sauce, and sprinkle crumbled feta cheese on top.
