Description

Juicy, tender chicken skewers marinated with olive oil, lemon, and herbs, perfect for summer barbecues.


Ingredients

  • 600g boneless skinless chicken thighs or breasts, cut into chunks
  • 3 tbsp olive oil
  • Juice and zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme

Instructions

  1. In a bowl, mix together the olive oil, lemon juice and zest, minced garlic, dried oregano, and dried thyme.
  2. Add the chicken chunks to the marinade and mix well to coat.
  3. Cover and let marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  7. Serve warm.

Notes

For extra flavor, marinate overnight. Use metal skewers or soak wooden skewers to prevent burning.
