Ingredients

- 600g boneless skinless chicken thighs or breasts, cut into chunks
- 3 tbsp olive oil
- Juice and zest of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
Instructions
- In a bowl, mix together the olive oil, lemon juice and zest, minced garlic, dried oregano, and dried thyme.
- Add the chicken chunks to the marinade and mix well to coat.
- Cover and let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
- Serve warm.
Notes
For extra flavor, marinate overnight. Use metal skewers or soak wooden skewers to prevent burning.
