Description
Tender marinated chicken skewers grilled to perfection, served with a vibrant mixed salad.
Ingredients
Scale
- 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into 1.5” cubes
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- Mixed salad (lettuce, cucumber, tomatoes, etc.)
Instructions
- In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, cumin, and paprika.
- Add the chicken cubes to the marinade and coat well.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through.
- Serve with a mixed salad on the side.
Notes
Add pita bread and tzatziki sauce for extra flavor. Store leftovers in an airtight container for up to 3 days.
