Description

Tender marinated chicken skewers grilled to perfection, served with a vibrant mixed salad.


Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into 1.5” cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Mixed salad (lettuce, cucumber, tomatoes, etc.)

Instructions

  1. In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, cumin, and paprika.
  2. Add the chicken cubes to the marinade and coat well.
  3. Cover the bowl and marinate in the refrigerator for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through.
  7. Serve with a mixed salad on the side.

Notes

Add pita bread and tzatziki sauce for extra flavor. Store leftovers in an airtight container for up to 3 days.
