Ingredients

- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil, divided
- 1 cup long-grain white rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and halved
- 2 tablespoons fresh parsley, chopped
- Juice of 1 lemon
Instructions
- Season the chicken pieces with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
- In a pot, bring 2 cups of water to a boil. Add the rice, cover, and reduce heat to low. Cook for 15-20 minutes or until rice is tender and water is absorbed. Fluff with a fork.
- In a large bowl, combine the cooked rice, tomatoes, cucumber, feta cheese, olives, and parsley. Drizzle with the remaining olive oil and lemon juice. Toss gently.
- Serve the rice mixture topped with the cooked chicken.
Notes
For extra flavor, marinate the chicken in lemon juice, olive oil, and herbs for 30 minutes before cooking. Use brown rice or quinoa for a healthier grain option.
