Ingredients

  • 2 large boneless, skinless chicken breasts (halved horizontally into cutlets)
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tbsp capers
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken cutlets with salt and pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add lemon juice, chicken broth, and capers. Bring to a simmer and scrape up any browned bits from the bottom of the skillet.
  5. Return the chicken to the skillet and cook for an additional 2 minutes.
  6. Serve the chicken garnished with fresh parsley.

Notes

Pound the chicken cutlets to a uniform thickness for even cooking. Adjust lemon juice and capers based on your taste preferences.
