- 2 large boneless, skinless chicken breasts (halved horizontally into cutlets)
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour (for dredging)
- 2 tbsp olive oil
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 2 tbsp capers
- Fresh parsley, for garnish
Instructions
- Season the chicken cutlets with salt and pepper. Dredge them in flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add lemon juice, chicken broth, and capers. Bring to a simmer and scrape up any browned bits from the bottom of the skillet.
- Return the chicken to the skillet and cook for an additional 2 minutes.
- Serve the chicken garnished with fresh parsley.
Notes
Pound the chicken cutlets to a uniform thickness for even cooking. Adjust lemon juice and capers based on your taste preferences.
