  • 1/2 pound cauliflower florets
  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 2 cups shredded cheese (e.g., mozzarella or cheddar)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until soft.
  3. Add the broccoli and cauliflower florets to the skillet and cook for a few minutes until they start to tenderize.
  4. Sprinkle in the garlic powder, Italian seasoning, salt, and pepper, stirring to combine.
  5. In a baking dish, layer the vegetable mixture, and then top with shredded cheese and grated Parmesan.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let cool for a few minutes before serving.
