Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, finely sliced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Flatbreads or tortillas
  • Cheese (such as mozzarella or feta)
  • Fresh herbs (such as parsley or cilantro)

Instructions

  1. In a slow cooker, combine the beef, olive oil, sliced onion, minced garlic, cumin, and smoked paprika. Cook on low for 360-480 minutes or until the beef is tender and shreddable.
  2. Once cooked, shred the beef and mix it well with the cooked onions and spices.
  3. Heat a skillet over medium heat. Place a flatbread or tortilla in the skillet.
  4. Spoon the beef filling over half of the flatbread and sprinkle with cheese.
  5. Fold the flatbread over and cook until the cheese melts and the bread is golden brown, about 2-3 minutes on each side.
  6. Serve warm, garnished with fresh herbs.
