Ingredients

- 1 lb beef chuck or brisket
- 2 tbsp olive oil
- 1 medium onion, finely sliced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Flatbreads or tortillas
- Cheese (such as mozzarella or feta)
- Fresh herbs (such as parsley or cilantro)
Instructions
- In a slow cooker, combine the beef, olive oil, sliced onion, minced garlic, cumin, and smoked paprika. Cook on low for 360-480 minutes or until the beef is tender and shreddable.
- Once cooked, shred the beef and mix it well with the cooked onions and spices.
- Heat a skillet over medium heat. Place a flatbread or tortilla in the skillet.
- Spoon the beef filling over half of the flatbread and sprinkle with cheese.
- Fold the flatbread over and cook until the cheese melts and the bread is golden brown, about 2-3 minutes on each side.
- Serve warm, garnished with fresh herbs.
