Description

A quick, healthy, and flavorful Mediterranean-inspired casserole packed with zucchini, tomatoes, and creamy cheeses.


Ingredients

  • 3 medium zucchinis, thinly sliced
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 small red onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchini, olive oil, salt, and pepper. Toss to coat.
  3. Add the chopped red onion, minced garlic, and cherry tomatoes to the zucchini mixture and stir well.
  4. Transfer the mixture to a greased baking dish.
  5. Sprinkle the mozzarella and Parmesan cheese on top.
  6. In a small bowl, mix breadcrumbs and Italian seasoning, then sprinkle over the cheese layer.
  7. Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

Slice the zucchini thinly for even cooking. Customize with other vegetables or cheeses as desired.
