Ingredients

- 3 medium zucchinis, thinly sliced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 small red onion, finely chopped
- 3 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 tsp Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchini, olive oil, salt, and pepper. Toss to coat.
- Add the chopped red onion, minced garlic, and cherry tomatoes to the zucchini mixture and stir well.
- Transfer the mixture to a greased baking dish.
- Sprinkle the mozzarella and Parmesan cheese on top.
- In a small bowl, mix breadcrumbs and Italian seasoning, then sprinkle over the cheese layer.
- Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
- Remove from the oven and let cool for a few minutes before serving.
Notes
Slice the zucchini thinly for even cooking. Customize with other vegetables or cheeses as desired.
