Description

A hearty and delicious soup that combines the flavors of a cheeseburger with the cozy comfort of macaroni soup.


Ingredients

  • 1 lb (450g) ground beef (or ground turkey/lamb)
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup small pasta (like macaroni)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until soft.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the ground beef (or turkey/lamb) and cook until browned.
  5. Stir in the oregano, beef broth, and diced tomatoes. Bring to a simmer.
  6. Add the pasta and cook according to package instructions until al dente.
  7. Stir in the shredded cheddar cheese until melted.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley if desired.
