Ingredients

- 1 lb (450g) ground beef (or ground turkey/lamb)
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup small pasta (like macaroni)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until soft.
- Add the minced garlic and cook for an additional minute.
- Add the ground beef (or turkey/lamb) and cook until browned.
- Stir in the oregano, beef broth, and diced tomatoes. Bring to a simmer.
- Add the pasta and cook according to package instructions until al dente.
- Stir in the shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.

You can store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
