- 1 tsp dried oregano or thyme
- Burrata cheese
Instructions
- Preheat the oven to 425°F (220°C).
- Arrange the eggplant slices on a baking sheet, brush with olive oil, and season with salt, black pepper, and oregano or thyme.
- Roast in the oven for about 25-30 minutes, flipping halfway through, until golden and tender.
- Remove from the oven and let cool slightly.
- Layer the roasted eggplant slices on a serving platter, adding pieces of burrata cheese between the layers.
- Drizzle with additional olive oil and sprinkle with fresh herbs if desired. Serve warm or at room temperature.
Notes
For best results, slice the eggplant evenly and let it cool slightly before adding the burrata cheese. Grilling instead of roasting is a great alternative for a smoky flavor.
