- 2 cups mixed bell peppers, sliced
- 1 cup zucchini, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup spinach
- 2 tsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Feta cheese for topping (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until the onion is soft.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in bell peppers and zucchini, cook for about 5 minutes.
- Add diced tomatoes, oregano, salt, and pepper, simmer for 10 minutes.
- Fold in spinach and cook until wilted.
- Serve hot, topped with feta cheese if desired.
