Ingredients

  • 1 lb ground beef
  • 2 cups mixed bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup spinach
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Feta cheese for topping (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until the onion is soft.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in bell peppers and zucchini, cook for about 5 minutes.
  5. Add diced tomatoes, oregano, salt, and pepper, simmer for 10 minutes.
  6. Fold in spinach and cook until wilted.
  7. Serve hot, topped with feta cheese if desired.
