Description

A hearty and flavorful Mediterranean stew made with tender beef and fresh vegetables.


Ingredients

  • 2 lbs (900 g) beef chuck, cut into -inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced
  • Salt and pepper to taste
  • 4 cups beef broth or water

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onions are translucent.
  3. Add the beef cubes, browning them on all sides.
  4. Stir in the sliced carrots.
  5. Pour in broth or water, cover the pot, and let it simmer until the beef is tender, usually about 120 to 180 minutes.
  6. Season with salt and pepper to taste, and serve hot.
