A hearty and flavorful Mediterranean stew made with tender beef and fresh vegetables.
Ingredients

- 2 lbs (900 g) beef chuck, cut into 1½-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- Salt and pepper to taste
- 4 cups beef broth or water
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onions are translucent.
- Add the beef cubes, browning them on all sides.
- Stir in the sliced carrots.
- Pour in broth or water, cover the pot, and let it simmer until the beef is tender, usually about 120 to 180 minutes.
- Season with salt and pepper to taste, and serve hot.

This stew is perfect for leftovers; refrigerate for up to 3 days or freeze for up to 3 months.
