- 2 lbs (900 g) beef chuck, cut into 1½-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- Water or broth to cover
- Optional: tomatoes, bell peppers, fresh herbs
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in minced garlic and cook for an additional minute.
- Add beef cubes and brown them on all sides.
- Incorporate sliced carrots and any additional vegetables or seasonings.
- Add water or broth to cover ingredients; bring to a boil, then reduce to a simmer.
- Cover and cook for about 90 to 120 minutes, or until beef is tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
For extra flavor, consider adding red wine to the stew. Fresh herbs like rosemary or thyme enhance the taste. To thicken the stew, mix cornstarch with water and add towards the end of cooking.
