Ingredients

- 4 salmon fillets (about 5–6 oz each), skin on or off
- Salt and black pepper, to taste
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika or sweet paprika (optional)
- Feta cheese, crumbled
- Sun-dried tomatoes, chopped
- Olive oil
- Lemon slices
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Season the salmon with salt, black pepper, dried oregano, and smoked paprika if using.
- Drizzle olive oil over the fillets.
- Top each fillet with crumbled feta cheese and chopped sun-dried tomatoes.
- Place lemon slices on top.
- Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
Make sure not to overcook the salmon for optimal moisture. Feel free to experiment with other herbs like thyme or basil.
