Ingredients

  • 4 salmon fillets (about 56 oz each), skin on or off
  • Salt and black pepper, to taste
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika or sweet paprika (optional)
  • Feta cheese, crumbled
  • Sun-dried tomatoes, chopped
  • Olive oil
  • Lemon slices
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Season the salmon with salt, black pepper, dried oregano, and smoked paprika if using.
  4. Drizzle olive oil over the fillets.
  5. Top each fillet with crumbled feta cheese and chopped sun-dried tomatoes.
  6. Place lemon slices on top.
  7. Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Garnish with fresh parsley before serving.

Notes
