Description

A delightful and healthy dish featuring tender salmon fillets topped with feta cheese and sun-dried tomatoes, perfect for a quick weeknight dinner.


Ingredients

  • 4 salmon fillets (about 56 oz each), skin on or off
  • Salt and black pepper, to taste
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika or sweet paprika (optional)
  • Feta cheese, crumbled
  • Sun-dried tomatoes, chopped
  • Olive oil
  • Lemon slices
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the salmon and season with salt, black pepper, dried oregano, and smoked paprika.
  4. Top each fillet with crumbled feta cheese and chopped sun-dried tomatoes.
  5. Add lemon slices on top for flavor.
  6. Bake in the oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Garnish with fresh parsley before serving.

Notes
