A light and flavorful baked fish dish that’s packed with Mediterranean flavors, quick to prepare and healthy.
Ingredients

- 4 white fish fillets (cod, sea bass, haddock, or snapper — 150g each)
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 lemon, thinly sliced
- Juice of 1/2 lemon
- 1 cup cherry tomatoes, halved
Instructions
- Preheat the oven to 200°C (400°F).
- In a baking dish, arrange the fish fillets and drizzle with olive oil.
- Sprinkle minced garlic over the fish and place the thin lemon slices on top.
- Squeeze the juice of half a lemon over the fish.
- Scatter the cherry tomatoes around the fish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve warm with additional lemon slices if desired.
Notes
Make sure not to overcook the fish as it can become dry. Use fresh ingredients for the best flavor.
