Ingredients

  • 4 white fish fillets (e.g., cod, halibut, or sea bass)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup green olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons capers (optional)
  • Juice and zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon red chili flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the fish fillets in a baking dish. Drizzle with olive oil and season with garlic powder, oregano, salt, and pepper.
  3. In a bowl, mix cherry tomatoes, olives, parsley, capers (if using), lemon juice, lemon zest, minced garlic, olive oil, and chili flakes. Spoon this mixture evenly over the fish fillets.
  4. Cover the dish with aluminum foil and bake for 15–20 minutes, depending on the thickness of the fillets. Remove the foil and broil for an additional 2–3 minutes to lightly brown the topping.
  5. Sprinkle with additional fresh parsley and serve with crusty bread, rice, or a side salad.

Notes

For best flavor, use fresh fish and herbs. Adjust seasoning to your liking, and feel free to add extra vegetables.
