Ingredients

- 4 cod fillets (or another firm white fish like halibut or sea bass)
- 2 tbsp extra virgin olive oil
- 1 zucchini, sliced
- 1 red bell pepper, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, drizzle olive oil and arrange the sliced zucchini and red bell pepper.
- Place the cod fillets on top of the vegetables.
- Season the fish and vegetables as desired.
- Bake for 15-20 minutes or until the fish is cooked through and flaky.
Notes
If desired, drizzle with lemon juice before serving. Leftovers can be stored in an airtight container for up to 2 days.
