Description

A delightful Mediterranean dish featuring tender cod fillets baked with fresh vegetables in a creamy sauce.


Ingredients

  • 4 cod fillets (or another firm white fish like halibut or sea bass)
  • 2 tbsp extra virgin olive oil
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, drizzle olive oil and arrange the sliced zucchini and red bell pepper.
  3. Place the cod fillets on top of the vegetables.
  4. Season the fish and vegetables as desired.
  5. Bake for 15-20 minutes or until the fish is cooked through and flaky.

Notes

If desired, drizzle with lemon juice before serving. Leftovers can be stored in an airtight container for up to 2 days.
